Title: Baked Berry Apples
Yield: 2 serving
Preheat oven to 375 degrees F, or prepare a campfire. Wash the apples, then score a line around their waists to keep them from exploding. Partially core as one would for streusel apples, leaving a little apple at the base. Sprinkle over some cinnamon, then fill the hole by squishing in as many blackberries as possible. Sprinkle on a little salt over top.
If cooking on a campfire, spray tin foil with a little nonstick spray then entomb each apple separately. Rest in the embers of the campfire for 20 minutes, turning regularly.
If cooking in the oven, place in a 8x8 glass pan. Cook for about 40 minutes, checking every so often with a knife for tenderness.
About 90 calories per apple. Absolutely delightful. We've done it with frozen blackberries to great effect.
